Ingredients: (use what you have… fruit/ veg)
4 chicken breast fillets
2 zucchinis sliced
5 large mushrooms sliced
1 red capsicum diced
3tomatoes diced
1 cup pitted Kalamata olives
1cup green grapes
2 nectarines diced (these were left over from school lunches)
1/3 cup olive oil
1 cup chicken stock
2 tbs Italian herbs
1/2 cup white wine
2Tbs tomato paste
1/2 cup of sliced mozzarella or bocconcini or Fetta
Fresh basil
To make:
Throw all ingredients in tray
Cover in foil
Bake 1 hr at 180 degrees c
Serve with brown rice
